Personalise your own Single Malt (pinot cask) Whisky. Perfect as a neat sipper or in a (new) old fashioned. It's their whisky to enjoy their way.
First fill Tasmanian Pinot Noir casks with a medium toast have given incredible complexity to this whisky. Tasmanian coopers have broken these casks down into 100L format to bring a depth of flavour and exceptional balance between Pinot, oak, spirit & the elements.

All casks were ‘first fill’ having never held whisky, only Pinot previously, providing an amazing catalogue of flavour.

NOSE

A soft floral and nutty finish, fading into roasted coffee bean undertones.

PALATE

A delicate sweetness reminiscent of caramelised apples soaked in brandy dances on the tongue. These sweet fruits give way to rich, velvety dark chocolate and toffee characters.

FINISH

Spiced fruits and ripe oranges with hints of macadamia and walnut.

The Signature Series fuses the worlds of wine and spirits, as we've matured our new make spirit in both Australian ex-wine and classic American/French oak barrels.

Ex-wine barrels from Barossa hero our Nor’easter whisky, celebrating what Australia has done well for many years in winemaking to create a single malt whisky that builds the definition of Australian-made whisky.

NOSE

Notes of stone fruits (white peach, apricot, nectarine), golden apple Asian pears, floral (spring flowers), rich chocolate, a mild hint of vanilla & honey.

PALATE

Creamy texture almost custard apple or strudel, panna cotta roundness, pear notes, chocolate, and 5 spice present on the back palate.

FINISH

Light/medium bodied up front, nutty/chocolate, opens up in the mid to dried stone fruits, fine subtle tannins from French and American oak, preceding a long, rich, smooth, clean finish.
