Manly Spirits Co. Distillery is proud to announce a special collaboration with the Intercontinental Sydney, resulting in the exclusive Coastal Stone Single Malt Whisky crafted specifically for ASTER Bar.
This extraordinary journey began six years ago when we sourced premium ex-Bourbon barrels from Kentucky and brought them to our distillery at Manly Spirits Co. Here, they were filled with Coastal Stone Whisky and laid to mature on the northern beaches of Sydney for five years allowing the new make to absorb the unique coastal elements that our Coastal Stone range is renowned for.
To further add it's distinct character, the whisky was finished in a 50-litre first-fill ex-Port Wine barrel. The barrel then embarked on a remarkable journey to ASTER Bar, located on the rooftop of the Intercontinental Sydney. Elevated 31 stories above the city, the whisky spent an additional six months maturing while enjoying breathtaking 360-degree views of Sydney Harbour.
During its time at ASTER Bar, the whisky was exposed to the marine elements of the harbour. The fluctuating temperatures allowed the barrel to expand and contract, drawing out even richer, more complex flavours from the Port cask. After this final maturation period, the barrel was returned to Manly Spirits Co., where our head distiller, Dave, expertly balanced the whisky to a perfect 46% ABV before bottling it in our distinctive 700ml Coastal Stone bottles. Each bottle features a custom Aster Bar x Coastal Stone label and is sealed with a sandstone cork.
As a final touch to this unique collaboration, the last portion of the whisky was decanted into a 5-litre medium-char American oak barrel, to lay to rest on ASTER Bar’s bartop—a lasting testament to the whisky’s remarkable journey.
With a bold yet smooth 46% ABV, this whisky embodies the essence of a coastal-inspired lifestyle. On the nose, expect aromas of dark fruits and stewed plums, complemented by savoury hints of bacon and salted caramel. The palate reveals a rich yet light complexity, featuring vibrant notes of red cherries, sweet vanilla, maple syrup, and a touch of milk chocolate. The finish is smooth and elegant, with warming spices like five spice and nutmeg leaving a lasting impression.
Limited to only 75 bottles, this exclusive release is as rare and sought after as the stunning views from Aster Bar itself, making it the perfect companion for moments spent overlooking Sydney’s iconic harbour.
