8YR Single Malt Whisky MSD35 Beer Cask 51.6%

A cask with a storied history, it arrived to us having be used for Imperial Stout beer fermentation and maturation, then aged Tasmanian Single Malt, and finally 8 years of maturation of our New Make Spirit.

Dark, rich and brooding from the first pour, this spirit opens with an inviting aroma of baked green apple, roasted plums, sultanas, and malted barley, delicately laced with hints of toasted coconut.

It is bold, full-bodied and lavish on the palate. A fusion of dark chocolate, spiced oak, and creamy toffee emerge on the first sip, unfolding with remarking depth and balance.

Hinting of its Imperial Stout past, the complexity of the mid-palate, with its natural sweetness , lead to a long and indulgent finish, offering lingering notes of chocolate ganache, rich Christmas cake and smooth Crème Brûlée
