30ml Manly Spirits – ‘The Beaches’ Gin
120ml Premium Tonic 

METHOD

Build all ingredients with ice into a highball. Top up with tonic (we like Fever-Tree Mediterranean) and garnish with fresh mint and a slice of pineapple.
