Making an exceptional dry gin can take months, if not years, to properly perfect. First, you need a neutral base spirit, at Manly Spirits, we use Australian wheat neutral grain spirit.
The next step in making our Australian craft dry gin is distillation. The liquid mixture is heated until it evaporates into a gas and then collected as it recondenses into a liquid again. This process filters out impurities and increases the concentration of the alcohol.
Finally, the gin gets proofed back (diluted) to a suitable drinking strength — true dry styles tend to be a bit stiffer than other gins out there and can only be watered down to a minimum strength of 37.5%. Once we are happy with the taste and quality of our gin, we bottle and label it — our gin is finally ready for you to sample it yourself!
