Ruby Dusk Gin is the perfect accompaniment to any Christmas meal — or dessert at any time of the year. With hints of roasted wattleseed, berry glaze, and a touch of cherry derived both from black cherries and from cascara during distillation; there’s also a touch of cinnamon to round out the flavour and provide festive flair in the process.
As a gin distilled with cherries & native botanicals, it’s a drink with a bold, sweet flavour that evokes delicious toppings and syrup, while still retaining the distinctive neat sophistication associated with gin.
Cascara is a byproduct of coffee production, the dried skins left behind by coffee cherries. Although it’s often been discarded as waste, cascara is actually quite aromatic, infused with delicious fruity scents. In recent years, it’s emerged as an ideal way to subtly introduce dried fruit, berry and cherry flavours into gin, helping add an additional sweetness and tartness into gin without compromising the underlying neat and dry qualities of the drink.

Ruby Dusk Gin is a bold and sophisticated gin celebrating the flavours of Australian desserts with honey roasted Wattleseed and baked berry glaze, balanced with the dried cherry flavours of cascara.
Every year, tonnes of Cascara is discarded as fruit waste with the processing of the coffee bean and with it, the rich flavours of dried fruit that deserve to be celebrated. Ruby Cascara Gin gives Cascara a new life by extracting the flavours that would have otherwise gone to waste, with its fragrant cherry notes to be appreciated in all fullness.
Balanced with a strong pairing of cardamom and nutty Wattleseed and a touch of Cinnamon Myrtle rounded out with a surprising smooth bitterness of cacao. Infused black cherries offer a striking red hue, with a subtle tart sweetness on the palate reminiscent of baked cherries.

Lemon Zest balances our Ruby Dusk Gin with a slight sour citrus.

Wattleseed brings a distinct nutty, coffee and roasted character to our spirits, which really emulates the uniqueness of the Australian bush.

Angelica root is one of the traditional gin botanicals, and has a slightly bitter, herbal and earthy flavour.
