Coastal Citrus Gin: is just summer on the beaches in a bottle. Taking inspiration from the Australian Coast and its native pantry. Earthy citrus notes from Lemon Aspen partner with exotic Meyer Lemon to a give a punchy citrus hit which is offset by the delicate savour flavour from local Sea Parsley and Fresh Coriander leaf. Lilly Pilly Pink: has a classic gin foundation with soft red berry notes from Lilly Pilly and Raspberry, complemented with citrus from native limes and blood orange. A refreshing fruity finish served well with splashings of lite tonic, garnished with raspberry, pink grapefruit slice and edible flowers. 40% Alc/Vol

Lilly Pilly Pink Gin was inspired by the native Australian Lilly Pilly berries and rambling pink flowers found tucked in the sand dunes of the Northern Beaches.
Botanicals
Distilled with marine & Australian native coastal botanicals

Orange peel is one of the real heroes in our Australian Dry Gin and Amber Spiced Gin, bringing a bright & fresh citrus characteristic balanced with the juniper and peppery notes.

Location: NTH NSW Cultivated
Finger Lime is a rainforest fruit grown in the hinterland of the northern rivers of NSW & QLD. The lime crystals are packed with a highly concentrated lime flavour that explodes in your mouth.

Orris root has an earthy yet floral flavour profile, and when distilled, it is used to bind and enhance the flavours of other botanicals.

Angelica root is one of the traditional gin botanicals, and has a slightly bitter, herbal and earthy flavour.

We use the leaf of the Mountain Pepper plant, harvested from Tasmania, which adds a mild chilli and peppery character to our gin.

If you’ve ever tried juniper berries, it’s likely that you instantly thought of gin. Juniper is what makes a gin, a gin. It’s the strong piney notes that really shine when distilled, giving gin that beautifully unique ‘gin’ characteristic.

Coriander seeds bring a beautiful lemony citrus flavour to our traditional gin botanical base.

Lilly Pilly is a type of Riberry, which is a popular berry that grows on hedges around NSW, and brings a tart, cranberry like flavour to our Lilly Pilly Pink Gin.

Lemon Zest is the clear hero in our Zesty Limoncello. We hand peel our lemons to control the amount of pith included, and send off the rest of the lemon to a local juice maker to make fruit juice.

Location: Foraged from Whale Beach
Sea parsley can be found growing around the sea cliffs by the beach, particularly around Whale Beach (if you’re on the Northern Beaches of Sydney). As you can imagine, sea parsley has a slight saltiness to its flavour profile from the sea spray and incoming tides, combined with a fresh continental parsley character.

Lemon myrtle has a fresh aroma of citrus and a delicate menthol and eucalyptus essence, with a sweet and refreshing lemon flavour.

A sub-tropical australian native tree traditionally found in the rainforests of Northern NSW. Slightly sweet liquorice profile on the front palate, which builds and lingers on the back palate to a refreshing, earthy menthol profile similar to star anise.

Sea Lettuce is a algae that grows on the rock shelves, which makes it an incredibly dangerous botanical to forage (our team have the scars to prove it!). We only collect what we need, and a little bit goes a long way as its important to balance the beautiful umami, oceanic character that sea lettuce brings to our spirits.
