Pear & Elderflower Gimlet

with

Like a late night rendezvous with an ex, this bittersweet beverage will leave you questioning why you’ve done it every day this week.

INGREDIENTS

  • 40           Coastal Citrus

  • 20           Pear Syrup

  • 15           Elderflower Liqueur

  • 15           Lime Juice

  • 1pc         Poached Pear

For the poached pears:

1btl        Sweet vermouth

2kg         Pears (quartered & de-seeded)

1kg         White Sugar

8              Cloves

1              Vanilla Bean (halved)

8              Allspice Berries

1              Cinnamon Stick

Cook until pears are soft.

METHOD

  • Muddle poached pear

  • Add rest of ingredients, ice and shake for 20 sec

  • Double strain into chilled coupe

  • Garnish with slice of pear
