The process of distilling

Our four custom designed Copper pot stills with innovative reflux condenser give us more control over the purity and flavour profile of all our spirits. This allows us to craft fine and exquisite artisan spirits from Australian produce.

Spirits start their lives as sugars and starches. The other key ingredient to the mix is yeast. When yeast meets either of these two substances in the right environment it breaks down the sugars to create carbon dioxide and alcohol. To make a spirit, you simply take that fermented liquid and distil it. Distillation is the process that separates compounds by their different boiling points. Ethanol or distillate boils off first, vaporises, is captured and then re-condensed into a liquid with higher concentrate of ethanol as less water.

We have four stills at Manly Spirits Co. Distillery named aptly after our founders four children who have lived through David and Vanessa’s single ongoing conversation for the last couple of years!!!

Named after the youngest son, our smallest 50L copper pot still is used for developing new expressions of our white spirits along with bespoke commissions for trade.

Named after the tallest son and the oldest son, these copper pot stills of 1000L and 1500L are the workhorses of our distillery producing our clean but full flavoured whisky.

Our ‘beautiful one’ named after our daughter. This is the only word to describe this piece of art machinery. A 600L Holstein still distilling our signature gins and botanical vodkas with effortless ease.
