We strongly believe in work, life, pleasure balance. $30 (plus booking fee) includes all equipment, your premium gin & tonic and Yoga Session run by Sydney Collective Yoga. Post class the distillery is open for healthy cocktails, tasty nibbles and hanging out with your yogi mates.

Taking its inspiration from the Australian coast and its native pantry. Earthy citrus notes from Lemon Aspen partner with exotic Myer Lemon to give a punchy citrus hit which is offset by the delicate savoury flavours from local Sea Parsley and fresh Coriander leaf. All of which is rounded out with the classic Juniper backbone. A savoury style of gin with bursts of citrus and a creaminess of a lemon meringue tart.
Cocktail – Gin & Tonic
Ingredients:
1 part Manly Spirits Coastal Citrus Gin
3 parts tonic water (premium tonic).
Ice: Cubed or hand-chipped
Garnish: Slice of lemon and a sprig of Coriander
Glassware: Highball
Method: Add gin to ice-filled glass, top with tonic water and stir.
Occasion: Any time of the day. After work, aperitif, intimate drink.
Coastal Citrus Batch #01

Botanicals: Six botanicals. Juniper, Sea Parsley, Lemon Aspen, Lemon Myrtle, Meyer lemon, Fresh Coriander Leaf
Still: 600L Holstein copper still

A London Dry style with an Australian coastal twist, Manly Spirits Australian Dry Gin is a smooth well-balanced gin distilled using pure Australian wheat spirit. Using ten carefully-considered native and traditional gin botanicals, including sustainably-foraged marine botanicals, our Australian Dry gin showcases bright, fresh citrus and seaside notes on the nose, with the palate delivering gentle peppery notes and a complex savory finish.
Cocktail – Gin & Tonic
Ingredients:
1 part Manly Spirits Australian Dry Gin
Ice: Cubed or hand-chipped
Garnish: Slice of orange
Glassware: Highball
Method: Add gin to ice-filled glass, top with tonic water and stir.
Occasion: Any time of the day. After work, aperitif, intimate drink.
Food Pairing: Cured smoked salmon with a squeeze of fresh lemon, Tapas plate of fresh olives, cured meat, and smoked cheeses.

Botanicals: Ten botanicals. Traditional gin botanicals plus aniseed myrtle, finger lime, mountain pepper leaf, and sustainably-foraged sea lettuce.

Full-bodied and well-rounded, North Fort White Dog Malt Spirit offers a soft sweet aromatic maltiness with light spice on the nose and palate.

Base: Australian Malted Barley
Proof: 45% ABV (90 US proof)
Distilled with sustainably-foraged Australian native botanicals and exotic spices, Manly Spirits Terra Firma Botanical Vodka imparts a sweet orange nose, with a rich roasted nutty finish.
Cocktail – Espresso Martini
Ingredients:
Ice: Cubed (for shaking)
Garnish: Three coffee beans
Glassware: Cocktail or coupette
Method: Shake all ingredients with ice and strain into cocktail glass
